Chikhirtma – Georgian Chicken Soup is the cure for your soul and your body. It really does not matter what time of the day it is – breakfast, dinner, or supper time, there is always time for Chikhirtma.
Do you have a hangover?
Do you need some comfort food for your gloomy and freezing evenings?
Did you catch a cold?
There it is.
Chikhirtma – Georgian chicken soup is the one that will definitely help you.
The cure formula is simple – chicken broth – egg – vinegar. Some might connect the dish with the Greek soup Avgolemono. The place of origin of this magic dish can be argued, though the method of preparation is quite local and authentic for Georgia. It is widely loved and adored.
I found this recipe for you in the book of Barbare Jorjadze. Barbare puts the dish in the section “Dishes after the feast” and she offers Chikhirtma variations made of lamb, chicken, turkey, and goose.
As I said, the dish is very popular in Georgia. Especially when you have a hangover. As a rule, Chikhirtma and chacha are the best hangover duo in Georgia.
You can find it in every Georgian recipe book, in families, and of course, in restaurants. You can taste Chikhirtma in the following restaurants in Tbilisi: Maspindzelo, Pasanauri, Ludis Moedani, Chemo Kargo, etc. or you can make it all by yourself following this recipe.
Enjoy your meal!
